On my home router, I have added a route where dst address is 10.10.80.0/24 and gateway as sstp interface. I however still can't access CHR over Winbox. I can however access CHR via public IP Winbox.

I believe the reason you want to have different configurations per cAP is so that you can assign frequencies. This may not be the best move.
Create the four channels or more on CAPsMAN, then set channel reselect interval to 15 minutes. This way, cAPs shall select the best channel amongst the preset.
Add access list rule on CAPsMAN to drop connections weaker that -65 or -70 depending on usage. This enables roaming of gadgets. Please implement above tweaks then give feedback.
Looks like some serious interference. Enable reselect interval on CAPsMAN to 15 minutes.

Yes to everything. I would go for a RB4011 and have access list rule on the cAPs based on signal strength not weaker than -67. A pair RB750 for CAPsMAN would also be included for redundancy. Play well with frequencies to avoid interference in adjacent classrooms.
You can download and upload the latest release of RouterOS in the files section of your CHR then point cAPs via CAPsMAN to pickup the latest ROS from there and update. Could be MIPSBE or any other.
Yes cAPs do support redundant setups. Simply configure a second CAPsMAN exactly as the primary then in your cAPs, add the IP or name of the redundant CAPsMAN under the primary. Any changes to primary CAPsMAN have to be manually duplicated in redundant CAPsMAN.

Just to emphasize on Failover and redundancy. Implement proper synchronization so that if master hotspot server goes offline, the redundant one doesn't cause users to login again.
Do this for Capsman too so that when performing changes on CapsMan, one doesn't have to configure two routers.

Your installation site matters. Check out the beam formation pattern of the devices and compare to your installation case. You risk having a weak signal on one side while it goes to waste on the other.
USB power is 5 volts. This is not enough to power LTE, WLAN, GPS and other internal functions concurrently. This is known and a thread about the same exists on this forum. GPS misbehaves without an external antennae. Of course you have to download the GPS package for it to work.
