If both sides are MTs' you should use an IP Tunnel because WG and OVPN are UDP and are being targeted widely right now.
Can you elaborate on attacks against these services?

(2) The IP address is good, /24 here as it should be for a MT device.
Why is this? Surely if I wanted a different subnet, it would work if defined properly? Could I configure a /27, for example?

Concur, the nomenclature slave interfaces is old.... I would start the configs from scratch for sure............ The problem I have is that you have not really indicated a Server Client Relationship. Both devices should not be setup as Server............... You have both routers accepting incoming ...

I just tried from 7.4 to a machine on the same subnet and it worked fine, even prompted for, and accepted, the totp code the SSH server wanted. Possibly not very helpful in resolving your issue, but yes, it works for me.
