For those who, like me, struggled to have ROS running on Apple Silicon. I'm sharing the config that, for me, solved the issue:
I'm running UTM Version 4.5.3 (99) on Apple M2 Max, Sonoma 14.5.

Hey!

Indeed, putting ether5 in the gateway field of the manually created default route does not work (router accepts it but i don’t have connectivity) and gateway changes every now and then. I mean, could be the same for three hours but then changes. :-(

I'm afraid I can't because the branches are using 4g/5g connectivity behind a double(maybe triple) nat from the telco provider and not even with public IP addresses. take one of the most feasible branch as backup point. and start making a partial mesh topology heading to those 2 route server (hq and that new backup point). after that - try to use dynamic routing protocol such as rip or ospf on those 5 sites (adjust which protocol suits your requirements). Will the second central (backup) node be on LAN with the primary central node?
No it's a totally different site: another location, another provider, another connectivity.

Apologies, I should have made clear: we have different hosts running different hypervisors virtualising different VMs. All hypervisors connect to the same AP hence share the same network segment.

Some of the VMs should be able to talk each other, ideally ONLY to each other.
