We are using the RB-433AH MBs with the POE-24i injectors. Looking on routerboard.com it says the MB can consume upto 2Amps but the injectors can only provide 800ma. If we fully stock these boards, are we going to have a power shortage issue?

It depends on which wireless cards you use or complements you atach to the 433...
