Don't follow your settings.
1. You are NOT using ac mode. a/n is using a or n mode, not "ac". Use "onlyAC".
2. You use superchannel because that's the only way to bypass the SXT ac characteristics and to violate legislation. The SXT ac uses "outdoor" frequencies only. Using channel 5180 outdoor is illegal in Serbia, it can only be used indoor. Transmit power should be 11dBm. (27dBm-16 dBi antenna gain)

3. Wifi is a shared medium. If ping times go up at some point in time, something else could be using the channel.
4. Your devices could generate excessive traffic at some point in time.
5. Is there anything in the log about that time?
6. Fluctuating interference or obstruction is possible. You only have 95% of CCQ, so there are already 5% retransmits even at good times.
7. Check freq-usage and snooper again. And do use DFS channels, they even have a stronger TX power (EIRP) allowed. Wait 1 full minute for the AP to start transmitting. (Channel 120-128 waits 10 minutes). At 5700 MHz your disconnect is 1 minute if it is a radar detected. So make a channels list at the "bridge" side, to make it choose another channel, avoiding the 10 minute channels.

8. Use nv2. I had a problem with a tree in the fresnel zone. Unstable connections, CCQ of 95%. Hiccups about every 2 hours but random (probably depending on the wind". With nv2=100%ccq and stable connection for weeks.
I see no reasons to suspect your devices, nor that there would be any "factory error".
