@xperiments2021, we can point you to gazilion tons of guides, papers, tutorials & videos for Mikrotik training, but you will be lost.
In my honest opinion, if i were you, i would start with small bits and start building up. Ideally, get your mikrotik in working state for a small network and access internet. Then start adding things one at a time such as:
- queues by bandwidth separated
- Dual wan load balance and/or failover
when i started the self learning process with Mikrotik, i followed this approach and i got my Mikrotik to connect via pppoe to the ITSP and added my LAN to simply access the net. After that i did the next bits i wanted. If you would like to start with something similar, give me a shout and i could guide you on how to do thinks with Mikrotik.
