If you set PPPoE logs to save in memory, do you get information at log print ?

Yes, I get log in memory, but nothing on Syslog server.

I'm using PortPeeker for listening. Also I'm developing my syslog server (Delphi).

Use torch or packet sniffer (in torch you may want to increase the time), and see if its actually sending syslog packets out.

remote logging works for us, but instead of using the remote action, we make a new action and use that. It shouldn't make any difference that I can think of, but you could give it a try.

I assume syslog packets are not firewalled or otherwise blocked between the RouterOS device and your syslog server?

Upgrade your router to 2.9.46 version.
Make sure that Syslog server is accepting data correctly.
