How do you test NAT/firewalling perf of a given NAT/firewall router (could be a Mikrotik RouterOS device or not) ?

If I'm not mistaken, some NAT/firewall operations are done when a new flow is detected while other are repeated afterwards.
So do you need to often create new flows (ie changing one IP address, ...) to get meaningful results ?
