when one is going to use dst-nat or scr-nat
does one use the ip address off the pppoe local address or does one use the remote address that is given to pppoe??

That would depend on what you wanted to dst or src nat.... Usually, since the client devices would be considered directly connected to one of the AC's interfaces, I would think that you would use the remote address.....
