RB850Gx2 seems like a good platform to build on. It just needs an SFP port and PoE out on at least 4 ports.

Apparently you missed the part where it used to be 1506. MikroTik recently fixed this with a software fix in RouterOS 6.21. Up until then, nobody was able to achieve 1580 with this model. That's what this thread was talking about as it was started before the fix was released.according to the mikrotik wiki the MTU (maximum packet size without MAC header) is 1580.
That is enough for about everything you need.
Downloadable package does not mean that applicable routerboards could be downgraded or upgraded to particular version. I have almost "killed" my RB133C3 with 6.x version.yes, I am sure. Look at the download page, there you will find Version 4 and 5 for PPC RB 800 Series.
